Asparagus Tortilla Quiche

Asparagus Tortilla Quiche

Ingredients: 

1 large flour tortilla
10-15 stalks asparagus
4 eggs
½ cup heavy cream
2 cups grated gruyere
½ small onion-finely minced
¼ tsp nutmeg
salt and pepper to taste

Directions:
preheat oven to 350 degrees
line an 8 inch pie plate with the tortilla
chop the bottom half of the asparagus into ¼ inch dice, leaving the top 3 inches. 
Scatter the diced asparagus and minced onion onto the tortilla
add the cheese
Whisk the eggs, cream, nutmeg, salt and pepper together and pour over the veggies and cheese
arrange the remaining asparagus stalks decoratively on top
Bake for 40 minutes, or until a knife inserted in the middle comes out clean
Let rest for 5 minutes before serving
