Chicken Parmesan Potato Bake

Chicken Parmesan Potato Bake 4 pieces boneless, skinless chicken breasts or thighs 1 pound cubed potatoes 1/3 cup grated Parmesan 2 garlic cloves, minced 1 tbsp Italian seasoning 1 teaspoon salt 1/2 teaspoon black pepper 1/4 cup olive oil 1 cup chicken broth Fresh parsley, chopped, for garnish Step 1: Preheat oven to 350 degrees Step 2: In a small bowl, combine the Parmesan cheese, garlic, Italian seasoning, salt, and pepper. Mix well. Step 3: Rub the chicken breasts with olive oil, then coat them with the herb and Parmesan cheese mixture ensuring even coverage Step 4: Place the cubed potatoes in the bottom of a 9 x 13 baking dish. Drizzle a little olive oil over the potatoes and sprinkle with a pinch of salt and pepper. Nestle the coated chicken breasts on top of the potatoes in the dish. Step 5: Pour the chicken broth around the sides of the chicken to keep the herbs in place and help contribute moisture. Step 6: Cover the dish with foil and bake 45 mins. Uncover and finish baking until chicken and potatoes are browned and potatoes are easily pierced with a knife.
