Chickpea Burgers and Fries

Chickpea Burgers and Fries 6 baking potatoes, scrubbed and pricked with a fork 2 tbsp oil 1 (19 oz) can of chickpeas, drained and rinsed 1 cup cooked rice (preferably brown) ⅓ cup each grated carrot, onion and zucchini ¼ cup dry bread crumbs 1 egg, beaten 1 clove garlic, minced 2 tbsp peanut butter or tahini 1 tbsp lemon juice salt and pepper to taste 6 buns lettuce tomato STEP 1: Place potatoes on a large plate and microwave for about 6 minutes. Set aside to cool. (This can be done several hours ahead) STEP 2: When cool enough to handle, cut into French fries, toss with oil, season with salt and place on a lined baking sheet. Bake in a 450 degree oven till brown and starting to crisp. Flip as needed. STEP 3: Meanwhile, in a medium bowl, coarsely mash chick peas. Stir in rice, onion, carrot and zucchini, bread crumbs, egg, garlic, peanut butter, lemon juice, salt and pepper. Mix well. STEP 4: Shape mixture into 6 patties. (It can help to wet your hands) STEP 5: Grill or fry about 5 minutes on each side. Serve on buns with lettuce and tomato. Add cheese if you’d like.
