Mexican Colslaw

Mexican Coleslaw

4 cups shredded red or green cabbage, or a combination of both
1 tin black beans, drained and rinsed
2 green onions, chopped
½ cup mayonnaise (or Greek yogurt for a lighter version)
2 tablespoons fresh lime juice (about 1 lime)
1 teaspoon chili powder (adjust to taste)
½ teaspoon smoked paprika (optional for a smoky kick)
¼ teaspoon ground cumin (optional for extra depth)
Salt and black pepper, to taste
¼ cup fresh cilantro, chopped (for garnish)

Mix the dressing:
In a large mixing bowl, combine mayonnaise, lime juice, chili powder, smoked paprika, cumin, salt, and pepper. Stir until smooth.
Prepare the Salad:
Combine cabbage, black beans and green onions and toss with dressing. Top with cilantro if using
