Pumpkin Coconut Pasta

Pumpkin Coconut Pasta 1 large tin pumpkin puree (Not pumpkin pie filling!) 1 tin coconut milk (you can substitute heavy cream) 1-2 cloves garlic, finely minced 1 tbsp oil 1-2 tsp dried thyme 400 gms dried pasta of your choice Step 1: In a large pot of heavily salted water, cook pasta until al dente. (The water should taste like the ocean) Step 2: While pasta is cooking, in a frying pan heat oil over medium heat. Add garlic and cook 1-2 minutes, until garlic starts to soften. Step 3: Stir in pumpkin and half the coconut milk. Stir, adding more coconut milk until desired consistency is reached. Add thyme and simmer 4-5 mins, or until pasta is finished cooking. Step 4: Drain pasta, reserving 1 cup of pasta water, and add pasta to sauce, stirring until pasta is coated. Add a bit of pasta water if the sauce needs more thinning. Serve immediately.
