Irish Chicken and Potatoes

Irish Chicken and Potatoes

8 chicken legs or thighs
2 tbsp oil 
1/2 head of cabbage
1 medium onion
4 potatoes
1/4 cup water

Rub
½ tsp onion powder
1 ½ tsp thyme
½  tsp salt
¼  tsp pepper
½  tsp garlic powder
1 tsp sweet paprika

Step 1: Preheat oven to 375 degrees.

Step 2: Mix together rub ingredients. Roll the chicken pieces in the spices and set aside.

Step 3: Heat oil in a frying pan. Brown the chicken pieces. When browned set aside on a plate.

Step 4: While the chicken is browning, roughly chop the cabbage. Then slice the onion into thin slices. Next slice the potatoes into rounds about ¼ inch thick.

Step 5: When the chicken is browned, add the cabbage to the pan with ¼ cup water, after a few minutes mix in the potatoes and onions. Take off of the heat and place in a 9 x 13 baking dish

Step 6: Add the chicken pieces on top of cabbage mixture. Place the dish  in the oven and cook until the chicken is done, about 45 - 50 minutes for all to cook. The juices from the chicken will help to cook the cabbage and potatoes.
